Marionberry Donuts
1 cup marionberry juice
1 cup sugar
3 1/2 cups flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 cup butter
2 eggs
1/2 cup buttermilk
vegetable oil for frying
Boil the marionberry juice about 8 minutes until it's reduced down to 1/4 cup and set aside. Beat sugar and butter until smooth. Add eggs. Add buttermilk and juice.
Mix flour, baking powder, baking soda and salt. Add to butter mixture. Do not overmix.
Roll out dough. It is sticky dough so flour generously. Roll out to 1/2 inch thickness. Cut into circle and cut out the holes.
Bring 3 inches of oil to 375 degrees. Fry doughnuts and donut holes about 1 1/2 minutes on each side. When you take them out, put them on a paper towel lined plate for 1 minute.
Put 1/2 cup sugar in a paperbag and place hot donuts inside and shake until coated.
