It kind of has the texture of couscous. I had it again tonight, so I've had it 3 ways.
1. In place of rice at the bottom of my bowl of chicken tortilla soup. 2. In place of rice with chili beans and black beans over top. 3. I used it as I would oatmeal. Added craisins as it cooked and sweetened it with cinnamon and splenda. Had milk on top....
Oh, yum! Your ideas look great. I've only had it once - cooked in chicken broth, and used as a side dish. Guess I ought to be more creative with my cooking -

Okay, sort of okay. Give me a choice of this stuff or oatmeal, and I would take oatmeal. :)

I love it with roasted peppers, red onions, garlic and lemon juice.
