HOMEMADE APPLE CIDER DONUTS

Donut Mixture

1 cups sugar
1 tsp cinnamon
1 1/2 cups apple cider
2 tsp baking powder
1 tsp salt
3 1/2 cups flour
4 TBSP unsalted butter (see note below)
2 large eggs plus 1 egg yolk (see note below)
6 cups vegetable oil, for frying

Finishing Mixture

1 cup sugar
1 TBSP cinnamon

Combine sugar/cinnamon ingredients for finishing donuts in a paper bag, shake to mix and set aside.

Bring cider to a boil over medium heat for about 20 minutes, until it has reduced to 1/2 cup. Let it cool to room temperature.

In a large bowl combine baking powder, salt, 1 cup of flour, cinnamon and sugar. In a small bowl combine butter, eggs, and cooled cider. Add cider mixture to flour mixture and whisk until smooth. Add remaining flour and mix until just combined. Dough will be sticky. Refrigerate 10 minutes.

Heat oil to 375. Roll out dough to 1/2 inch thickness. Cut out donuts and holes. We don't have donut cutters, so we used a plastic cup and turkey baster.

Slide donuts, one at time, into the hot oil. They will rise after 1 minute, turn them over and fry 1 1/2 minutes longer. Transfer to a plate lined with paper towels for 1 minute. Place them in the paper bag and shake to coat with the cinnamon sugar mixture.

I think they are best served warm.

**To make them vegan, I substituted the egg for Energ G egg replacer and the butter for Earth Balance Buttery Sticks.

ICE APPLES

Have you heard of them? I haven't, until now.
Al's Garden Center offers them once a year and I'm definitely going to pick some up. I heard they do not disappoint and I'm looking forward to it.

PS - The scones smelled SO good! I'm going to make some blueberry vegan scones today.

PUMPKIN CHOCOLATE CHIP COOKIES

When I saw a recipe containing pumpkin and chocolate posted on One Charming Party, I knew I had to try it.
It is so good and was super easy to make vegan.
My man clan and their taste buds are so happy right now!

1 1/2 cups sugar

1/2 cup butter

1 egg

1 tsp vanilla

1 cup canned pumpkin

2 cups flour

1/2 tsp salt

1 tsp baking soda

1 tsp baking powder

1 tsp cinnamon

1 cup chocolate chips

Cream the sugar and butter. Mix in the egg, vanilla and pumpkin. In another bowl whisk together the flour, salt, baking soda, baking powder and cinnamon. Add flour mixture to the pumpkin mixture. Mix just until combined. Stir in the chocolate chips. Drop spoonfuls onto a cookie sheet and bake for 10-15 minutes at 350 degrees.

To make the cookies vegan, I substituted butter, egg and chocolate for Earth Balance buttery sticks, Ener G egg substitute and Sunspire vegan chocolate chips.

We ate the cookies while watching The Little Vampire. I love October!

MY GRANDPA'S FUNERAL WAS

wonderful.
We shared memories, tears and laughter....

and got reconnected with...
Aunts...

Uncles....

And cousins....

One of the highlights was going to Glen Canyon and all of us eating one of Grandpa's favorite food. Cantaloupe ala mode.....

The boys and I, along with my cousin Jill and sister went to The Sweet Tooth Fairy Bakery in Provo before we left...

My favorite is the Toasted Coconut cupcake - ooooh lala is it GOOD!

And we got some pool time in the mornings.

We all loved Grandpa so much and it was wonderful saying goodbye with so many of us all together.
