2 sticks butter, softened
3/4 cup brown sugar
2 1/2 cups flour
1/2 tsp baking powder
1/2 tsp cinnamon
1/4 tsp salt
Heat oven to 350. Cream butter, sugar and egg. Combine dry ingredients and gradually add to butter mixture. Once incorporated, roll the dough into small balls (approximately 1 tsp each). Place on a cookie sheet and use your thumb to indent the center of the ball. It helps if you flour your thumb. Fill the cookie with a bit of jam, (1/4 tsp - 1/2 tsp.)
Bake 15 minutes. Cool 5 minutes then transfer the cookies to a cooling rack.
Tip - don't snitch the cookies too soon, the jam is super duper hot!
