FOR ABOUT 6 MONTHS MY

hand mixer has been broke and this is how I use it - with one beater.In my dreams, I have a fairy godmother named Martha Stewart and she gave me this beauty.

While some people want a fairy godmother for a rockin' man, I want a rockin' kitchen. While I wait for my dream to come true, I use my white trash mixer. It makes me laugh while it takes me longer but it does the job. This morning I made this delicious vegan banana chocolate chip bread.

1 3/4 cup flour
2/3 cup sugar
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 large bananas, mashed
1/3 cup Earth Balance buttery sticks
2 TBSP almond milk
Ener-G egg substitute for 2 eggs
1/2 cup semi sweet dairy free chocolate chips

In a large bowl, combine 1 cup of flour, the sugar, baking powder, baking soda and salt. Add mashed banana, butter and milk. Beat on low until blended then on high for 2 minutes. Add egg replacement and remaining flour. Beat until blended then add chocolate chips.

Pour into greased loaf pan and bake at 350 for 55 minutes or until done.

My mixer broke too, so I borrowed KIm's...and I have never given it back! Naughty me!!

Looks like it works good to me! I have stuff like that in my kitchen. I have a love/hate relationship with spending a lot of money for my kitchen ~ haha

Most of your Vegan recipes are really good! This one looks good too. Maybe you can drop lots of hint for a new mixer for Valentines day......can't buy you candy ;)

I feel really bad saying this but I have a kitchen aid and do not use it. I am such a creature of habit with my hand beaters.
